You can use this recipe to make one large pizza or to make into several mini pizzas. Your pizza can also be put in the freezer to eat on another day. Makes 8 pieces

Ingredients   Utensils
1 small zucchini, washed
100 g mozzarella cheese
2 spring onions, washed
1/2 red capsicum, washed
4 mushrooms, sliced (optional)
1 cup SR flour
1 cup wholemeal SR flour
2 tablespoons olive oil
1 egg
3/4 cup low-fat milk
1/2 cup tomato paste
Wooden spoon
Fork or egg whisk
Small mixing bowl
Large mixing bowl
Oven tray (21 cm x 30 cm)
Non-stick cooking spray
